  • 2 cups (250g) maize meal
  • 1 cup (125g) cake flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 2 large eggs
  • 1 cup (250ml) buttermilk
  • 1 cup (250ml) milk
  • 1/2 cup (125ml) vegetable oil
  • 1 cup (150g) grated cheddar cheese (optional)
  • 1 cup (200g) whole kernel corn, drained (fresh or canned)


  1. Preparing the Oven to 180°C (350°F), grease a standard-sized loaf pan and set it aside.
  2. Mixing Dry Ingredients:
  3. In a large mixing bowl, combine the maize meal, cake flour, baking powder, salt, and sugar, and mix the dry ingredients until well combined.
  4. Followed by Mixing the Wet Ingredients: In a separate bowl, whisk together the eggs, buttermilk, milk, and vegetable oil, and gradually add the wet ingredients to the dry ingredients, stirring continuously to form a smooth batter.
  5. Adding Cheese and Corn:
  6. If desired, fold in the grated cheddar cheese and whole kernel corn into the batter, ensuring even distribution of cheese and corn throughout the batter.
  7. Pour the batter into the greased loaf pan, spreading it evenly, smooth the top with a spatula for an even finish.
  8. Place the loaf pan in the preheated oven and bake for approximately 40-45 minutes or until a toothpick inserted into the centre comes out clean. The top should be golden brown, and the bread should have a firm texture.
  9. Allow the Mealie Bread to cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely. Slice and serve the bread warm, accompanied by butter or as a side to your favourite South African dishes.
